In particularly good years there is a Banyuls Grand Cru Baillaury by Cave de l'Abbé Rous with a vintage. This consists of 70% Grenache Noir and 25% Grenache Gris grapes. After the must has fermented for some time, fermentation is stopped with eau de vie, which means that part of the natural grape sugar is retained. It remains in large wooden tubs for several years, where it slowly matures. After being bottled, it continues to be stored at the winery and is only put on the market when it is perfect to drink. Banyuls goes great with chocolate desserts and blue cheese.
